This rub makes for quite amazing steak. Rub a bit of it on the meat (I used strip steak yesterday), let it sit for a couple of hours and grill: split the grill up into hot and medium sections, fry up both sides of the steak on the hot section, then transfer to medium and close the grill. I burned wood in the grill before putting coals in and brought the meat up to about 140 degrees. It came out spicy on top and thoroughly smokey and tender on the inside.| < Prev |
